ICING ON THE CAKE

No idiom's here, we are literally talking icing.

If you're anything like me, you shamelessly live for sweet, decadent treats; especially during the holidays. But a good ole' fashioned cake always makes the rounds in our home.

We love food, especially desserts, so there's never a shortage of good eats. But one thing I will say is this: you will never find a boxed dessert or prepackaged container of goods in my pantry.

Instead, what I do continuously stock are the essentials for all-things baking. And with the holidays around the corner, what better way to kick-start the season than with one of my all-time favorites, Red Velvet Buttercream.

Here's what you'll need:

  • 1 cup butter, unsalted & softened

  • 1 8-oz. package cream cheese

  • 2½ teaspoons vanilla

  • 2 teaspoons gel-based red food coloring (gel gives a richer red)

  • 4 cups powdered sugar

  • ¼ cup cocoa, unsweetened

Here's how you do it:

  1. In a large bowl, whisk butter until creamy.

  2. Add cream cheese; whip together until fully incorporated.

  3. Add vanilla and food coloring. Blend until light and fluffy.

  4. In a large bowl, whisk together powdered sugar and cocoa.

  5. Gradually add powdered sugar and cocoa mix, until well combined.

The end result will make your heart smile.
