SUGAR COOKIES date back many, many, many years so there's no secret to this madness. But there is something about sugar cookies that screams love. So if you are that person who cringes at the mere thought of seasonal baking, sorry, this post is not for you. As for the rest of us, it is time!
It's time to turn up that Christmas music and crank up that oven!
With that said, I'm sharing my recipe for VANILLA BEAN SUGAR COOKIES. Write it down, store it, keep it handy, memorize it; it is THE BEST sugar cookie recipe you will ever want or need. And the only one my kids and I use during the holidays.
3 c all-purpose flour
2 tsp baking powder
1 c vanilla sugar
2 sticks butter, cold and cut in cubes
3/4 tsp pure vanilla extract
1/2 tsp pure almond extract (DO NOT SKIP THE ALMOND EXTRACT INGREDIENT)
1 vanilla bean, scraped
Combine dry ingredients: flour, baking powder
Combine wet ingredients: whip together butter and sugar, then add egg, extracts and the scraped inside beans of the vanilla pod.
Slowly combine the dry ingredients into the wet ingredients.
Roll out dough, 1/4" thick; put your cookie cutters to work.
Freeze cookie cut-outs about 7 minutes.
Remove cookies from freezer; directly place them in oven.
Bake for 10-12 minutes.
THE BEST SUGAR COOKING ICING
3 cups powdered sugar
¼-½ cup milk (measure until you get a toothpaste consistency, then stop)
1 tablespoon light corn syrup
1 teaspoon almond extract
gel food coloring
