Really, I'm not.
SUGAR COOKIES date back many, many, many years, so there's no secret to this madness.
But there is something about the month of August that screams fall for me; which by the way is my favorite time of year. And yes, I get it, technically it's still considered summer, and extremely hot in some areas, but for some reason August is different.
So if you are that person who cringes at the mere thought of seasonal changes or even the holidays, sorry, this post isn't for ya'.
As for the rest of you, it is time! It is time to start talking HOLIDAYS!
DID YOU KNOW THERE ARE [LESS] THAN 150 DAYS BEFORE CHRISTMAS?
And although some may disagree, there's no time like—late summer—to get started in the beginning phases of what some may call holiday torture. Remember, stress comes to those who wait for the eleventh hour, and even then you shouldn't complain, it's the holidays—not torture!
With that said, I'm sharing my recipe for VANILLA BEAN SUGAR COOKIES. Write it down, store it, keep it handy, memorize it; it is THE BEST sugar cookie recipe you will ever want or need. And the only one my kids and I use during the holidays, or any occasion:
3 c all-purpose flour
2 tsp baking powder
1 c vanilla sugar
2 sticks butter, cold and cut in cubes
3/4 tsp pure vanilla extract
1/2 tsp pure almond extract
1 vanilla bean, scraped
Combine dry ingredients: flour, baking powder
Combine wet ingredients: whip together butter and sugar, then add egg, extracts and the scraped inside beans of the vanilla pod.
Slowly combine the dry ingredients into the wet ingredients.
Roll out dough, 1/4" thick; put your cookie cutters to work.
Freeze cookie cut-outs about 7 minutes.
Remove cookies from freezer; directly place them in oven.
Bake for 10-12 minutes.
