KEY LIME PIE GIRL

Every year, on my kids birthdays, I always ask them, "What dessert do you want for your birthday?" It's so traditional that even my daughters-in-law know this. So the next big day, in cue, is the birthday of my daughter-in-law Hope.

And this is what she chose, KEY LIME PIE.

Here's what you'll need:

Pie shell:

  • 1/3 cup butter, melted

  • 2 cups graham cracker crumbs

Pie filling:

  • 4 egg yolks

  • 2 cans sweetened condensed milk

  • 1 cup lime juice, freshly squeezed

  • 1-1/2 tablespoons lime zest

Whipped cream:

  • 1 cup heavy cream

  • 2 tablespoons powdered sugar

Here's how you do it:

Preheat oven to 350°

For the crust, combine butter & graham cracker crumbs. Pat down in a pie pan. Bake approx. 5 minutes.

In a medium bowl beat egg yolks, condensed milk, lime juice.

Fold in lime zest.

Pour filling over crust and bake an additional 15 minutes.

For best results, refrigerate pie overnight before serving. 

Fresh, sweet homemade whipped cream topping:

Beat heavy cream and sugar, until thickened and stiff.

Footnote: this pie sits approx. 2” high.
