Every year, on my kids birthdays, I always ask them, "What dessert do you want for your birthday?" It's so traditional that even my daughters-in-law know this. So the next big day, in cue, is the birthday of my daughter-in-law Hope.
And this is what she chose, KEY LIME PIE.
Here's what you'll need:
5 tablespoons butter, melted
1½ cups graham cracker crumbs
2 egg yolks
1 can sweetened condensed milk
½ cup key lime juice
1 tablespoon lime zest, grated
1 cup heavy cream
2 tablespoons sugar
Here's how you do it:
Preheat oven to 350°
For the crust, combine butter & graham cracker crumbs. Pat down in a pie pan. Bake approx. 5-10 minutes.
In a medium bowl beat 2 egg yolks, condensed milk, key lime juice, and zest.
Pour filling over crust and bake an additional 15 minutes.
For best results, refrigerate pie overnight before serving.
The next day, make fresh and sweet homemade whipped cream topping.
Beat sugar and heavy cream until it thickens. Top your pie. Serve and enjoy.
